You can find a good tutorial with an example at: http://developer.gnome.org/feature/archive/gconf/gconf.html

The API docs are available at: http://developer.gnome.org/doc/API/2.0/gconf/index.html

I used http://www.gnome.org/~newren/tutorials/developing-with-gnome/html/apd.html#gconf-example-1-gtk when I was trying to figure it out. As Anderw mentioned, the API docs is good to use as well. As far as simply getting/setting values, it's pretty straight forward.
